I’m not having raw pasta or lasagne that often but when I do, I’m always surprised how good it is. Yesterday I made some Mini-Lasagne for us and it was so good that I just have to share the recipe with you.

Here are the ingredients that you will need for the Mini-Lasagne:
INGREDIENTS (for approximately 6 Mini-Lasagnes):
- 1 small Zucchini
- 1/2 Avocado
- 1 slice of lemon
- 1 tbsp celery salt
- 18 slices of Zucchini (use a big and thick one)
- 8-10 sundried tomatoes (salt-free)
- 350 g cherry tomatoes
- 6 Deglet Noir dates (pitted)
- some fresh herbs and Alfalfasprouts for garnishing
Add the small zucchini (roughly chopped up), the avocado, the celery salt and the lemon into your blender and blend well. If you like it creamier than feel free to add in a whole avocado. The avocado cream is ready. Add 250 g of the tomatoes, the sundried tomatoes and the dates into your blender and blend until smooth. The tomato sauce is ready. Cut the leftover tomatoes into slices. Now we start ”building” the lasagne. Place one slice of zucchini on a plate. Add some slices of tomatoes, some avocado cream and some tomato sauce on top and cover it with another slice of zucchini. Now we add some more tomatoes, avocado cream and tomato sauce and cover it with the last slice of Zucchini. Top it with some more avocado cream and tomato sauce and garnish it with some fresh herbs or alalfa sprouts.
I fix the lasagne with a wooden pic to keep it in form. The higher the lasagne the more unstable it will become. If the tomato sauce is too thin than just add in some more sundried tomatoes or strain it a few minutes.
As you might notice the zucchini extract water when getting in contact with the sauces. There is nothing you can do about it. That’s why I recommend to prepare the lasagne straight before serving.
I just love this mixture of the sweet tomato sauce and the creamy avocado sauce. As you can prepare the sauces and the slices and everything ahead this is the perfect starter to serve friends. It’s just a quick fix left.
