PINEAPPLE GAZPACHO

Do you know these days when you have so much to do and you don’t feel like spending an hour to chew a big salad? If you also have these days from time to time than this recipe is for you.

Today we will make Pineapple Gazpacho. I really like this dish a lot when having little time to eat. It contains a lot of leafy greens but you don’t have to chew for hours.

INGREDIENTS:

  • 1 pineapple
  • 1 cucumber
  • 150 g mixed salad (I use a mixture with different colors to attract the eye)
  • 150 g spinach
  • 1/2 Jalapeno
  • 1 spring onion
  • 2 cm ginger or more if you like
  • some cayenne pepper

 

PREPARATION:

Put the mixed salad and the spinach into your food processor and puls blend until roughly chopped. Put the chopped salad into a big bowl. If you don’t have a food processor you could chop everything by hand or with a knife. Put the remaining ingredients into your food processor and chop roughly. Don’t overdue it other wise it gets too watery. Add the mixture to the salad, stir everything around and ready is the gazpacho.

I don’t chop all ingredients in one go in my food processor because I made the experience that the salad will not be chopped up at all and the pineapple and the cucumber get too watery. That’s why I make it in two steps.

I really like this dish on busy days. I also like to fill up some romaine leafs if I’m craving pineapple and have some more time to chew. There are so many options how to enjoy this dish.

As always great quality ingredients are key to success. So make sure the pineapple is ripe and juicy.
