Do you want a real calcium boost? For strong bones and white teeth? Than todays recipe is especially for you.
Today I’ve created a recipe that covers your daily need of calcium in just one meal. Yes I know it’s unbelievable but it’s true. Leafy greens, sesame, dill and wild greens are loaded with calcium. But also Maca powder, parsley, chia seeds and sprouts contains high amounts of calcium.
With the following recipe I cover my daily need of calcium which is slightly below 1000 mg a day.
For the salad:
- 150 g kale (240 mg calcium)
- 50 g nettles (240 mg calcium)
- 100 g dandelion (190 mg calcium)
- 100 g chickweed (80 mg calcium)
- 1 carrot grated
- 250 g cherry tomatoes cut in quarters
- some dried flowers
For the dressing:
- 300 ml fresh orange juice
- 2 tbsp sesame (200 mg calcium)
- 25 g dill (50 mg calcium)
- 1 tbsp celery salt
Put all the ingredients for the salad into a nice bowl. Than you put all the ingredients for the dressing into your blender and blend until really smooth.
I just love this combination of this fresh and creamy dressing together with all these tender greens. The vitamin C from the dressing also helps to absorb the iron from the greens much better. Win Win:-)
Hint: To prevent the nettles to burn your hands and mouth I massage them into a bowl so the stings will break and don’t burn any longer.
This salad together with the dressing contains more than 1080 mg of calcium. This calcium your body can absorb easily and it’s also loaded with tons of other nutrients, minerals and vitamins.
