The pumpkin season is here and every year when pumpkins are coming in store I’m so motivated to create new recipes to eat pumpkin raw. During winter I tend to crave some cooked food and pumpkin is one of my absolute favorite. But since I created this recipe the craving for cooked pumpkin is totally gone. My absolute favorite pumpkin is the Hokkaido pumpkin. Which one is yours?
- 1 small Hokkaido pumpkin
- 4-6 sun dried tomatoes soaked in water for 3 hours
- 1 teaspoon kummin
- 1/2 teaspoon nutmeg
Cut the pumpkin into smaller pieces (take away the seeds of course) and put all the ingredients into your Highspeed-blender and blend everything well. OBS: For this recipe you really need a strong blender. I think a normal blender just don’t make it.
If you like the humus even more creamy than feel free to ad some avocado and blend again.
I tried this recipe with another variety of pumpkin (the one you decorate for Halloween and cut out) but this did not turned out good at all. It didn’t taste good at all so I really recommend the Hokkaido pumpkin for this recipe.
