- 3-4 bunches of parsley
- 2-3 big tomatoes
- 1/2 head of cauliflower
- the juice of 2 lemons
Chop the parsley as fine as possible and put it into a nice bowl. Cut the tomatoes into small pieces and add it to the parsley. Put that cauliflower into your food processor and process until it gets a couscous like consistency. Add the cauliflower to your bowl as well and mix everything well. Sprinkle the lemon juice on top and let it sit for 30 minutes to get it even more flavory. You can also eat it right away.
