One of my absolutely favorit recipe for dinner at the moment are my ”real rock’n rolls”. They are so easy and fast to prepare and I can fill them with whatever vegetables I have at home. They not only taste great, they also look yummy if you ask me. What do you think?
INGREDIENTS (for 2 wraps):
For the filling:
- 100gr spinach
- 2 tomatoes
- 50 gr alfalfa sprouts
- sprouted chickpeas
- some fresh cilantro (optional)
- 2 big rice paper (31 cm)
- 1 small butternut squash
- 1/2-1 avocado (depending how creamy you like it)
- some nutmeg
- some water
Cut the butternut squash into small pieces, remove the seeds and put the squash into your high speed blender. Add the avocado, some water and the nutmeg and blend well. Pour the dip into a nice glas.
Cut all your ingredients for the filling into smaller pieces. Take one rice paper and put it into water for a few seconds until they get soft. Put the soft rice paper on a cutting board and fill it with all your ingredients. Place the filling into the middle of the rice paper. Fold first the sides over the filling and roll it all up. Cut the wrap in the middle and put the 2 wraps on a nice plate. Add your dressing and you are ready to taste your real rock’n roll.
