Do you love pasta and want to eat it raw? Here is a great recipe that taste as good or better as cooked pasta with tomato basil sauce. If you make a blind test you would have difficulties to say which one is the cooked version.
For this recipe you will need:
- 750 grams of cherry tomatoes
- 2 bunches of basil
- 2-3 normal size zucchinis or 5 small ones
- some garlic (I use 1/4 of a clove)
- the juice of 1 lemon (optional)
YOU WILL ALSO NEED:
- a spiralizer or a potato peeler to make the ”pasta”
- a blender
Cut the ends of the zucchinis and make the pasta with your spiralizer. If you do not have a spiralizer just peel the zucchini in thin stripes which look like fettucchine pasta. Decorate the pasta on a nice plate. Put the cherry tomatoes, the basil, the garlic and the lemon juice into your blender and blend everything well. Drizzle the sauce over your pasta and decorate it with some cherry tomatoes and basil.
