You must try this amazing kale salad. It is low in fat, high in nutrition, crunchy and super JUMMY!!! You will be surprised how delicious kale can taste.
Here are the ingredients that you will need:
INGREDIENTS FOR THE SALAD:
- 1 cucumber
- 1-2 cups of fermented vegetables (i used fermented collard)
- 1/2-1 cup dried seaweed
- the juice of 1 lemon
- a mandoline, a grater or a food processor with a grating blad to cut the cucumber
INGREDIENTS FOR THE DRESSING:
- 2 zucchinis
- the juice of 1-2 lemons
- 2 bunches of spinach (200gram)
- 1 avocado (if you want it lower in fat just take 1/2 avocado, if you want it more creamy use more avocado)
- optional: 1,5 table spoon nutritional yeast (this will give it a more cheesy taste)
- a mixer
Put the seaweed into a bowl with water and let it soak for 5 minutes. Wash the seaweed after soaking. Remove the stem of the kale (safe the stems for juicing if you want) and cut it as small as possible. Put it into a big salad bowl and rinse the lemon juice over it. Massage the kale until it turns dark green and got a more soft consistence (takes approximately 2 minutes). Take your mandolin/grater or choose the grater plate for your food processor and grater the cucumber into small and thin stripes. Add the seaweed, the cucumber and the fermented vegetables to your kale and mix everything together.
Now your salad is ready. So let us continue with the dressing.
Cut the zucchini and the spinach and put it into your mixer. Add the lemon juice and the nutritional yeast and blend everything well. Add the avocado and blend again until the dressing gets really smooth and creamy. You will add the avocado last because it should not be mixed too long.
Add the dressing over your salad and enjoy this mushy delicious goodness of greens. Say JYM!!!
